I have Vista and just installed Avast after AVG misidentified iTunes as a trojan horse. When I restarted, it started to do a boot scan, so I said escape and it stopped, obviously. Will it do it again next time I start up? It seems like it won’t (I went to the boot scan option on the menu and it said ‘Schedule’, not ‘Modify’ or anything, as the first button), but I need someone else to reassure me of this because that’s how I am.

The boot scan is something that is part of the normal install/setup routine. It is default/on for one scan only following the setup. You might have seen that during the install process, without realizing what it meant, perhaps.
It will only occur again if you deliberately schedule it, which is only necessary if the computer is infected with something that can not be removed normally.
Hope you removed AVG correctly (uninstalled) and it’s also a good idea to run the AVG removal tool (Choose the appropriate one - 32 or 64 bit - for your OS.)

When I first installed Avast I was also freaked out by the “Boot Scan” thing. This was about a year ago, and I pressed ESC to get out of it because someone needed the computer or something, can’t remember exactly. But the next day or something, I did schedule a Boot Scan. It takes about 45 minutes to an hour and a half depending on the size of your hard drive. Time consuming, but EXTREMELY efficient! Many of the so-called top AV programs don’t have boot scanning. This is a very good tool because you have the system scanning everything before a boot up, so the threats are often taken care of before they are activated.
You generally don’t have to do it again unless you switch computers and install Avast on a different system. (Remove all traces of other AV programs in Control Panel First!) What Avast is doing with Boot Scan is saying, “Hey lets check out this machine and make sure it’s OK before Windows boots.”
