Use the hosts file to block them.
I believe this has to do with the URL you are trying to exclude is an HTTPS (secure) URL.
Previously before avast was able to scan HTTPS urls you couldn’t enter HTTPS in the site blocking as the web shield wasn’t scanning those. That, however changed in recent avast versions.
I setup a test on facebook.com, see attached image (click to expand) and that actually blocked the site. That said I expected it to block it in the way it used to for old avast versions on http pages (display a custom page indicating avast had blocked it), but there was no such custom page only a completely blank tab.
Questions for you:
What avast version are you using (latest 2015 10.3.2223) ?
What is the content of your entry in the Web Shield > Customize > Site Blocking field/s ?

I would first suggest that you do a program update from the avast User Interface to the latest version.
Whilst the first of your listings should work for youtube, I didn’t test youtube only facebook. The only problem I see is that sub-domains of youtube wouldn’t be caught by it, example test.youtube.com wouldn’t be blocked if they use sub-domains.
That is why I used the URL in my image example:
https://.facebook.com/
This is also why I use the /* rather than just * after the domain name.
However, like Eddy I feel that the site blocking function isn’t really suited to blocking lots of sites as you have to enter them individually. Whilst you can block by using the HOSTS file, that to needs manual updating. A better option is something like a host file management tool, something like hostsman (http://www.abelhadigital.com/hostsman) which comes with a default list of sites that is automatically updated and you can add domains to it.
