Updating base on info supplied by DavidR and Alikhan: If you disable Virus Definition Updates, you also stop all Streaming Updates*
*Streaming updates provide you with the latest protection against the newest discovered vulnerabilities.
Keep in mind though that avast can/will and have the right to overwrite them if they think it is needed.
Whilst Bob has pointed you in the right direction, if you disable auto updates for the Virus Definitions (VPS) then (as far as I’m aware) you also lose the streaming updates. So it wouldn’t matter if you had that option checked, it relies on the VPS updates being set to Auto.
EDIT: I’m testing this as the moment.

Yes, but I disabled auto updates to gather image evidence no streaming updates are delivered. From the image in this post you can see no further streaming updates have been received since then.
As you can see from the image, streaming updates had been coming through every few minutes prior to disabling auto VPS updates, but none since.
EDIT: Just enabled auto VPS updates again and got a slew of streaming updates immediately, image2.
