I am using Firefox 5 with AdBlock Plus and NoScript. If i run Firefox 5 in Sandbox will it have any effect on these add-ons? I.e. Will the add-ons still function and protect my browser as they should?

Yes, they will. The problem is that you may not upgrade/update them, you need to run your browser out of the sandbox as far I remember. That’s the main issue for me with the sandbox: the update of the addons limitation.

You could always select the option not to virtualize the add-ons.
