As I understand, Standard shield default position is: Normal.
Question:Is there any practical reason why should I change it to High?(Other than paranoidic reasons… :D)

No. Normal is the best balance between performance and protection.
If you want to tweak your installation, you could use Custom level. If you need help to do so, just ask (but the protection will be dropped somehow and not increased).
“Dropped” compared to ‘High’ that is. 
Or even to “Normal” depending of the customization…
