Question: If all posted ransomware I’ve seen does not encrypt a particular vendor’s backup file, does that mean issues restoring an image will be trivial?

If you do regular backup, and also save a backup of the backup offline so it cant be compromised you should be good to go at any time, and the amount of data you loose depends on how often you backup

I use Stack.
1 Tb free online storage with real time backup.
Change e.g. 1 character in a text file, save the file and within a minute the backup is updated.

I also use the system image program in Windows. I use SyncBack Free to backup and sync files to different drives. It allows me to view files before any changes are made. Both have been very reliable. I also backup to Box.com where I have 50GB storage. I have a copy of Windows 10 on a flash drive so I can easily start fresh and have a recovery drive in case the computer does not boot. I don’t really have any worries about my personal stuff and can restore a system image or a fresh copy of Windows 10 without having to spend too much time on it.
