IA64 is an all new architecture for 64 bit CPUs, promoted and developed by Intel and HP. This architecture is very powerful, designed for very high end servers. The CPU chips alone sell for around $3000 each, not including the motherboard and other peripherals.
X86-64 is a 64 bit CPU architecture promoted by AMD. This architecture is essentially an extension of the current 32 bit X86 CPU architecture (used in 386, 486, pentiums, and compatible CPUs.
A key difference between the two architectures is that IA64 contaions no legacy designs from the X86 architecture and will not be compatible with current programs you might use in Windows. X86-64 will run these programs just fine as it has full X86 compatibility.
Stay away from the IA one.
