I was wondering if it’s recommended and if people are turning off Avast self protection mode before starting to install over an existing version.

There’s no need to do that. Avast self-protection monitors unauthorized access to avast’s files/registry values, attempts to terminate avast processes etc. If these requests come from avast itself, they’re considered as legitimate.
