I want to use a good Hosts file as another layer of protection but reading about it online, it still seems confusing. I would like something that could automatically update it, and I generally don’t understand how to download and use it.

HostsMan is a good automatic update application for the HOSTS files as hpHosts and MVPS HOSTS files are the ones I use.

The companion browser speedup proxy HostsServer is good as it can log the effectiveness of the HOSTS file if you enable the logging function.

In HostsServer go to Preferences then select Enable log and Log referrer.
