I just installed Avast INternet Security with anti-spam on Outlook Express. It catches a lot of spam, but does not send it anywhere.
(1) Is there a way of getting a folder to which it goes automatically, and
(2) can I manually identify spam which it will then catch and identify as spam in future downloads?

what i did when using outlook express was using the filter in outlook express, i made a junk folder and told the filter to send all mail marked as spam by avast to that folder
or something like that if i remeber correct, have gone back to using webmail

OOPs, no default Junk mail folder in Express! I believe Pondus is correct on this step!
