If I check my IMAP e-mail through Outlook 07 exclusively, do I still benefit from having the Internet Mail Provider activated? I can’t tell if it checks all mail, or just mail accessed through Mozilla (which I never do).

It would only check mail that you receive through mozilla, any email you collect through Outlook 2007 would be checked by the Outlook/Exchange plug-in.
The Internet mail is handy in respect of it will scan any outbound email and may be the only indication you have an undetected trojan spambot on your system. That would rewuire you set the Internet Mail sensitivity to High.
