I’m running Avast Pro and have it set to automatically run a full scan once a week. If my laptop is inactive and goes into sleep mode, will Avast wake it up to run the scheduled scan?

No, the computer has to be running for the task to be started.
I don’t know if you could use the windows task manager (I never use it) to wake the system up with some minor action or other just prior to the avast scan.
